Ingredients:

6 Catfish Fillets
3 Cups Buttermilk
3 Cups All Purpose Flour
1 1/4 ouce Lemon Juice
1/2 ounce Hot Sauce
6 Lime Wedges
3 Cups Corn Tortilla Flakes
9 ounces Chile Con Queso (prepared)
3 ounces Pico De Gallo (prepared)
Vegetable Oil
Salt and Pepper

 

Recipe Directions:

In a bowl mix your lemon juice and hot sauce adding 1 1/4 teaspoon of salt and 1 teaspoon of black pepper and combine. In a seperate bowl add your flower and season with salt and pepper and buttermilk in another seperate bowl. Dredge your catfish fillets first into your seasoned flower coating well , and then into your buttermilk, and then into your corn tortilla flakes until it is entirely coated.

Heat your vegetable oil to 350 degrees in a saute pan making sure to have enough oil to cover your fillets. When oil is hot enough add in your catfish fillets in small batches and fry for approx 10 minutes or until fillets are golden bown and cooked through. Remove and drain on paper towels. Recipe serves 6 with a prep time of approx 15 minutes and 10-20 minutes of cooking time.
