Ingredients:
4 Catfish Fillets (approx. 1-1.5 lbs)
1 cup Dry Breadcrumbs (Italian seasoned)
1/2 Stick Butter Melted (can sub Margarine)
2 tblespoons Lemon Juice
Lemon Wedges (garnish)
Directions:
Preheat your oven broiler. In a shallow pan or bowl combine your melted butter and lemon juice and combine well. In a seperate small pan or bowl add your breadcrumbs. Now take each catfish fillet and first dredge them in the breadcrumbs coating lightly , then into your butter and lemon juice mixture, and then back into your breadcrumbs coating well. Now spray your broiler pan rack well with non stick spray or cover with coated aluminum foil and place down your catfish fillets. Place your fish 5 to 6 inches away from the heat and cook with oven door partially open for 8 to 10 minutes or until fish flakes easily using a fork.
(Remember to monitor the cooking carefully as all broilers differ in effectiveness and if you find your fish is darkening a little too quickly you may want to flip it halfway through cooking process.)
Once completed remove and serve hot along with lemon wedges.
