Catfish Chowder Recipe

Ingredietnts:

4 Catfish Filets (cut into pieces)
4-5 Slices of Bacon (thick cut if available)
6 Cups Chicken Stock
3 Cups Onion (diced)
2 Large Potatoes (boiled-drained and cut into small pieces)
1 Cup Celery (diced)
1 Can Sweet Whole Kernel Corn (dranibed – 15oz)
1 Cup Green Onion (sliced)
1/4 Cup Parsley (finely chopped)
1 Cup Heavy Cream
3/4 Cup Flour
2 tblespoons Old Bay Seasoning (Can sub fav seasoning)
1/2 teaspoon Hot Sauce
Salt and Pepper

 
Recipe Directions:

Place a large pot over medium heat and add your bacon cooking it until it is well browned and then removing the bacon strips setting them aside. Add your onion and celery to the pot and cook for 5 minutes.

Combine your flour and old bay seasoning into a bowl and combine then add into your pot over onion and celery ansd cook for 3-4 minutes stirring regularly until it aborbs the oil.

Now add in your chicken stock and stir it well to combine then add in potatoes, corn, parsley, and 3/4 of your cup of green onions and stir well allowing to cook for 5 minutes. Now add in your bite sized pieces of catfish stir well to combine and cook for 5-6 more minutes or until your catfish pieces are cooked through.

Now add your cream and stir well to combine then add in your hot cause and salt and pepper to taste. Allow to cook for 1-2 more minutes for it all to come together and the serve garnished with little of remaining green onions and diced pieces of your bacon strips.

Serves 8-10.
